90-second magic creamy chipotle sauce

Imagine - creamy, smoky, spicy queso WITHOUT ANY CHEESE OR DAIRY!


1 cup raw unsalted cashews

1 cup hot (boiling) water

1-4 canned whole chipotles in adobo (in Latin section of any grocery store)

4 peeled cloves raw garlic

1/4 cup lime juice

1 tsp salt

Make it:

Add everything to a high-speed blender and blend on high for 60 seconds until creamy. Store in the fridge for up to 2 weeks.

I use 3 whole chipotle peppers from the can for a medium spice and heat level, so adjust for your taste! Simply amazing on grilled vegetables, fish, meats or in tacos! Sometimes we dip raw veggies and chips!
